Apple Crisp Oatmeal Cookie Cups

If you’re like me, you probably can’t run into a grocery store right now without loading up on an assortment of apples, and have probably made multiple trips to your local apple orchards. Fall is my favorite season and my recipe choices certainly reflect that right now.

This weekend, I stumbled onto CountryLiving’s roundup of 53 delicious apple desserts. I didn’t have to scroll very far before I found a recipe I just had to try out: Delish’s Apple Crisp Cookie Cups.

This recipe is so easy and chances are pretty high that you already have all the ingredients ready to go.

Apple Crisp Oatmeal Cookie Cups

Ingredients

Cookie Cups

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 sticks unsalted butter softened
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp kosher salt

Apple Crisp Filling

  • 6 apples peeled, cored, finely diced
  • 2 tbs butter
  • 2 tbs cornstarch
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 and grease muffin tins. Set aside.

Oatmeal Cookie Cups

  1. Using a mixer, beat butter, granulated sugar and brown sugar until light and fluffy. Add eggs and vanilla to the mix and stir until combined. Then add flour, oats, baking powder, cinnamon and salt. Stir again until combined. 

  2. Scoop dough into the muffin tins and press dough into the shape of cups. 

  3. Bake for 15-20 minutes until golden brown and set. Remove from oven. 

  4. Spray down the bottom of a shot glass and press down on centers of the cookies again to recreate the cups (they will have lost a bit of their shape while baking). Set aside. 

Apple Crisp Filling

  1. Melt butter in a skillet over medium-high heat, then add the diced apples. Cook until they're soft, stirring occasionally to avoid burning any sides. 

  2. Pour the cornstarch, brown sugar, granulated sugar, cinnamon and nutmeg into the skillet and blend until caramelized. 

  3. Distribute the caramelized apples into each of the cookie cups. NOTE: The original recipe suggested adding caramel syrup to the ingredients as a topping for the apple crisps, but I had plenty of caramel in the skillet to go around.
